Flavouring Kombucha

Loving your kombucha but wanting a change in flavour?

How about trying different flavoured kombucha? Your choices are endless!

Once you have brewed your kombucha to your desired sweetness you can either add flavouring now and consume it if you’re not worried about it being fizzy. Or, if you want a fizzier finish with flavour, simply place your brewed kombucha into an airtight bottle with your desired flavourings for a second stage of fermentation. How to flavour your Kombucha

Brew you kombucha according to your Symbiota kombucha instructions using kombucha kit.

Once your have drained your fermented kombucha you have three options.

  • Consume it as it is
  • Add flavouring now and drink (not so fizzy option)
  • OR if you love some fizz and want to add flavour take your brewed kombucha and add it to an airtight bottle. Wine bottles work fantastically or if you have an empty coke bottle (obviously plastic is not the best for our environment, but these bottles do get great fizz!)
  1. Be careful not to fill to the bottle to the top, leave some space- approx. 4 finger spaces.
  2. Then add your chosen flavour (see below)
  3. Cap you bottle tightly and leave on your kitchen bench, out of direct sunlight
  4. Taste it each day and make sure you burp it daily (don’t want any explosions from all the contained fizz!)
  5. Once the desired flavour is reached you can place the bottle into the fridge and consume. Placing it in the fridge will stop it from fermenting anymore but sometimes can cause it to be slightly less fizzy- due to some “sciencey” stuff I’m not going to get into now
  6. If you don’t want to refrigerate your kombucha, that’s fine, it will simply become fizzier and less sweet over time due to the bacteria eating up all the sugars

 

 Flavouring options:

To flavour with fruit, choose your fruit and for the best results puree about ½ cup of fruit to 1L brewed kombucha. If there is no time for pureeing the fruit simply chop it up and shove it into your airtight bottle ready for the second ferment. Remember to cut the fruit small enough so you can get it back out the bottle neck!

Some Fruit ideas (any fruit you can think of)

  • Nectarines
  • Plums
  • Peaches
  • Mixed berries or single berry flavours- strawberries, raspberries, blueberries etc
  • Grapes
  • Pineapple
  • Lemon
  • Mango
  • Watermelon

Flavouring with herbs and spice (for 1L brewed kombucha):

  • 1cm crushed cinnamon stick
  • 2 teaspoons fennel seeds
  • Zest of half a lemon
  • 1 split vanilla bean extract
  • 1 tablespoon lavender buds
  • 2 teaspoons of grated ginger
  • A 3cm sprig of rosemary

 

Mixing fruit and herbs and spices:

One can also make combinations between herbs and spices and fruit. Some of my favourite are lemon and ginger, apple and cinnamon, mixed berries and vanilla.
